If you are looking for a healthy side dish with little prep time…THIS IS IT! You can also add fresh mozzarella or swap out some orzo for cannellini beans.


What you will need:

  • 5 roma tomatoes
  • handful of fresh basil
  • 1/4 cup of olive oil
  • pound of orzo
  • tablespoon of garlic salt
  • salt and pepper to taste


  • In large bowl combine olive oil, garlic salt, salt, and pepper
  • Slice tomatoes and add to bowl
  • Chop basil and stir in with other ingredients
  • Cook orzo then strain under cold water until pasta is room temperature
  • Add orzo to bowl and mix
  • Serve and enjoy
